Garlic-Mushroom-Cauliflower Skillet
serves 4
Ingredients
- 4 T butter
- 1 T olive oil
- 1/2 C onion, chopped
- 1/2 hd cauliflower, florets
- 1 lb mushrooms, sliced
- 2 T chicken stock
- 1 t fresh thyme, chopped
- 2 t fresh parsley, chopped
- 4 cl garlic, minced
Instructions
- Saute the onion in the butter and olive oil until softened. Add the mushrooms and cook until the mushrooms are well browned. Remove any excess liquid.
- Add the cauliflouwer and cook until brown, crispy, and caramelized. Add the chicken stock, thyme, 1 T parsley and garlic and reduce to form a sauce. Season to taste.
- Plate, garnish with the remaining parsley, and serve.
